Barbera d'Asti Superiore
Denominazione di Orgine Controllata
Produced with of Barbera grapes from Agliano.
The vineyards, cultivated with the guyot method, are approximately 20-30 years old and yield an average of 60
quintals per hectare.
The harvest usually takes place in early October.
The grapes are collected in baskets and are immediately
the cellar to be picked from the bunch and pressed. They are then placed in special, temperature-controlled
vats for 12-15 days of maceration, with frequent punching down to extract color-imparting elements. After
alcoholic fermentation, part of the wine is stored in steel tanks.
In spring, after malolactic fermentation,
it is put in oak barrels for at least 12 months of aging. The rest of the wine is put in small barrels
where it is fully aged (18 months), after which, perfectly mature and clear, they are blended and bottled,
then stored for a minimum of six months in temperature-controlled rooms until delivery.
Color: ruby red
with garnet reflections; nose is very intense, pure, mature, with unique elegance. Hints of cherry, red
berries, and a touch of fine wood and spices. Dry, full-bodied and persistent, with lingering hints of red
berries and a pleasant taste of liquorice.
Serve at 18° C. Excellent with roasts, grilled and stewed meat,
medium-aged soft and hard cheeses.
