Produced with Chardonnay grapes from selected vineyards in the zone of Asti.
The vines, with many stems pre hectare, are trained with the guyot method.
They are about 10-15 years old and yield approximately 80 quintals per hectare.
The grapes are generally harvested in September.
The grapes are collected in baskets and immediately taken to the cellar for soft pressing.
Only free-run juice, the finest part of the must, is used, stored in low-temperature steel
vats for 36 hours to clarify. As soon as the must begins to ferment, thanks to the addition of
selected yeasts, it is transferred to 225-litre barriques for malolactic fermentation. It is
then aged for 6-8 months.
Before bottling, the wine is clarified, filtered, and stabilised only if absolutely necessary.
The bottled wine is racked in temperature-controlled rooms until delivery (not less than 4 months).
Straw yellow colour. Intense nose, full and elegant. Dry and well structured, rich and full-bodied.
Serve at 12° C. Goes well with firs courses in general and
fish dishes, including those with sauces.
