Moscato d'Asti

Produced with Moscato grapes from the best positions in the zone of Canelli (AT). Moscato d'Asti

The vines, trained with the guyot method, are about 20 years old and yield approximately 100 quintals per hectare. The harvest generally takes place in mid-September. The grapes are collected in baskets and immediately taken to the cellar for soft pressing. Only free-run juice, the finest part of the must, is used, stored in low-temperature steel vats for 24 hours to clarify. The must is then filtered and cooled to -1° C until it is used. The must is placed in autoclaves, selected yeasts are added, and it ferments until the wine reaches an alcohol level of 5.5% and CO2 reaches a pressure of about 1.5 bar.

To assure that the wine stays sweet, fermentation is halted by refrigeration and by further filtering. Before bottling with isobaric fillers, the wine is clarified and stabilised only if absolutely necessary. The bottled wine is racked in temperature-controlled rooms until delivery.

Straw colour with greenish reflection. Delicius, fragrant nose, very fruity. Sweet and very elegant, with fresh acidity.

Serve at 8° C. Goes well sith dry pastries, tarts in particular.
