Roero
Denominazione di Orgine Controllata e garantita

Produced with Arneis grapes from the zone of Castellinaldo and Vezza d'Alba. The vines, trained with the guyot method, are about 12-15 years old and yield approximately 90-100 quintals per hectare. The grapes are generally harvested in late September. The grapes are collected in baskets and immediately taken to the cellar.

Only free-run juice, the finest part of the must, is used, stored in low-temperature steel vats for 24 hours to clarify. Part of the grapes is soft pressed. The rest of the grapes are cryo-fermented in special vats. After soft pressing, the must is stored in low-temperature steel vats. The two musts are then blended. As soon as the must begins to ferment, thanks to the addition of selected yeasts, it is transferred to temperature-controlled stainless steel vats to promote fermentation.

After alcoholic fermentation, Arneis is conserved and aged in stainless steel vats for 3-4 months. Before bottling, the wine is clarified, filtered, and stabilised only if absolutely necessary. The bottled wine is racked in temperature-controlled rooms until delivery.
